Eggmay Sandwiches Finger Sandwiches


Thinly sliced bread

Butter (at room temperature makes it easier to spread)

To Fill

Hard boiled eggs

Mayonnaise

softened butter

Chives

Salt and Pepper for seasoning

As a guide for every two hard boiled eggs use three teaspoons of mayonnaise, half a teaspoon of butter and 3 teaspoons of snipped chives.

When the eggs are cool, peel them and put them in a bowl and mash them up with the mayonnaise, butter and chives and season with salt and pepper. Next cut the crusts off the bread and butter the bread.

Now spread the mixture on to one slice of the buttered bread and then top with another slice of buttered bread.

Cut the sandwich into four neat triangles

Always cover sandwiches until they’re needed to prevent them from drying out.

Don't chop your chives, use scissors to snip them into tiny pieces.
