Tinted Angel Food Cake

 
Makes: 12 servings Prep: 20 mins Bake: according to package
 
  • 1 16 ounce package angel food cake mix
  • 1/2 0.16 - 0.23 ounce envelope Kool-Aid® tropical punch, pink lemonade, black cherry or your favorite flavor unsweetened soft drink mix (about 3/4 teaspoon)
  • 4 cups powdered sugar
  • 3 tablespoons hot water
  • 1 tablespoon grenadine syrup, maraschino cherry liquid, or 1/4 teaspoon Kool-Aid® unsweetened soft drink mix
  • White baking chocolate curls
1. In a large mixing bowl, combine angel food cake mix and 3/4 teaspoon Kool-Aid® mix. Prepare cake mix according to package directions.
2. In a medium bowl, combine powdered sugar, hot water and grenadine syrup. If necessary, add additional water, 1 teaspoon at a time, to make icing of drizzling consistency. Drizzle icing over cake. Top with white chocolate curls.

Makes 12 servings.

Homemade Butter

Crispy Oven Fries - Salt-free

Another recipe I made for my dad so it's salt-free.

Large cookie sheet with sides, lined with foil.
PAM
4 baking potatoes, scrubbed.
Garlic infused Olive Oil
Pepper
garlic powder

Oven 425 degrees

Scrub potatoes. Dry and slice thin, Spread out on cookie sheet, drizzle with olive oil, toss to coat. Shake on some pepper and garlic powder.

Bake 25 minutes or until the edges get crispy.

Those who can have salt, will want to salt these when they are still hot.

Grilled Pork Tenderloin - 5 Star


1 (4 pound) boneless pork top loin roast
(single loin)
1 teaspoon olive oil
2 teaspoons paprika
1 1/2 teaspoons onion powder
1 1/2 teaspoons garlic powder
1 teaspoon ground black pepper
1/2 teaspoon chili powder
1/2 teaspoon ground cumin

I made this for my folks for Mother's Day 2012 - very delicious. I made this without salt since my dad is on a salt restricted diet ...you could use garlic salt and onion salt.

Served with roasted broccoli and oven fries.

Place boneless pork loin on large cutting board or platter; brush oil over all sides. Set aside. Meanwhile, stir together dry rub seasoning. Rub over pork to cover. 


Preheat grill on high.


Place pork loin over medium high heat  (about 400 degrees F.) gas grill. Cook for 5 minutes on each side to brown. Move pork to area on grill over indirect heat. Cook, covered for 25 - 30 minutes with the lid down  or until internal temperature reaches 150 degrees F. On gas grill, move pork to one side of grill; turn off the gas directly under the pork. Leave the rest of the grill on medium heat. 


I used a gas grill with 3 burners.  Cooked the loins on the back  burner of the gas grill after they were seared... turned back burner to OFF
Turned the middle burner to Low 
Turned the front burner to Med High 

 Serve with your favorite sauce.

Ina's Oven Roasted Broccoli

Broccoli - cut into florets
4 cloves garlic slivered
5 TBSp Olive oil
(or drizzle and toss)

grated lemon peel from one lemon
2 TBSP lemon
Parmesan cheese

Preheat oven to 425 degrees

Cookie sheet with sides, lined with foil.

Distribute broccoli and slivered garlic  on cookie sheet, drizzle with Olive Oil, and toss. Bake for 25 minutes.
Remove from oven and add the grated lemon peel and Parmesan cheese.

Mistress Suzanne's Bananas Foster

Mistress Suzanne's Bananas FosterFrom Midwest Living
Makes: 4 servings Start to Finish: 20 mins
  • 1 pound vanilla ice cream
  • 3 tablespoons butter
  • 1/4 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons creme de banana liqueur or orange juice
  • 1 tablespoon light rum or orange juice
  • 2 bananas, sliced
  • Fresh mint sprigs (optional)

Directions

1. Place 2 scoops of ice cream in 4 stemmed dessert dishes. Place in freezer until ready to use.
2. In a large skillet, melt butter. Stir in sugar and cinnamon. Add creme de banana and rum or orange juice. Cook and stir until bubbly.
3. Add bananas to skillet. Cook, stirring frequently, for 1 to 2 minutes or until bananas are heated through. Serve immediately over ice cream. Garnish with mint, if you like. Makes 4 servings.
  • Trim some fat and calories by substituting reduced-fat ice cream for regular ice cream.

Quick and easy Garlic Bread

  • 1 loaf Ciabatta bread
  • butter
  • 5 cloves garlic, finely minced
  • paprika for dusting
  • 1/4 cup chives
Cut the Ciabatta bread into 2 long halves and liberally spread the butter on both sides. Evenly distribute the garlic and then dust each side with paprika. Bake in a 350 degree oven for about 8 minutes or until the butter has melted and the edges of the bread become crunchy. Sprinkle with chives and serve warm!
