Beery Beef Burgers

Few of us can resist the combo of salty and sweet. It’s what makes this burger recipe, which blends the crunch of crushed pretzels, the tang of beer and pickle relish, and the sweetness of roasted red peppers and onions into a new classic
Servings:         8 burgers
Prep time:       20 minutes
Cook time:      Broil 14 minutes

Ingredients:
2/3 cup beer
1/2 cup crushed pretzels
2 to 4 tablespoons chopped onion
2 tablespoon pickle relish
1/2 teaspoon salt
2-1/2 pounds lean ground beef
8 hamburger buns
Roasted sweet pepper strips, onion slices, pickled peppers, sliced tomato, ketchup, and/or mustard

Directions:
1. Combine beer, pretzels, onion, relish, and salt in a bowl. Add ground beef and mix well. Shape meat mixture into eight 3/4-inch-thick patties.

2. Place patties on unheated rack of a broiler pan. Broil 3 to 4 inches from heat for 12 to 14 minutes or until an instant-read thermometer inserted in burger registers 160 degree F, turning burgers once. Or place pattties on the rack of an uncovered grill directly over medium coals. Grill 14 to 18 minutes until done (160 degree F), turning once.

3. Serve on toasted hamburger buns or French bread with assorted condiments. Makes 8 burgers.

Brats Cooked in Beer ( also good for sausage or dogs)

* 2 teaspoons olive oil or butter, divided use

* 1 large sweet onion, sliced into 1/4-inch rings

* 6 bratwurst sausages

* 6 ounces (half a can or bottle) beer

Heat 1 teaspoon of olive oil or butter in a large Dutch oven. Brown bratwurst sausages until deep golden brown. Remove to a platter.

To the drippings, add the remaining teaspoon of olive oil or butter and the sweet onion rings. Toss the onions to coat with the oil.

Cook, stirring often, until onions are limp and golden but not brown.

Return the bratwurst to the onions and add the beer. Cook over medium heat until beer has cooked down to a syrup, about 12 to 15 minutes.Bratwurst may be served on buns with the onions or as an entree.The bratwurst sausage recipe is ready to serve 6 persons....enjoy the meal !

 Dark beer gives a richer flavor, but a standard commercial lager will work just fine.

Jan's Beer Bread with Options

Who doesn't love options? To me, it's a large part of what makes cooking fun!  This recipe has a lot of options.... and is wonderful as it is... makes a great gift as a mix or the finished bread. Enjoy!

3 cups unbleached flour – sifted (if you absolutely will not sift at least fluff your flour and spoon it into the measuring cup)

3 tsp baking POWDER

1 tsp. salt

¼ cup sugar

1 12 oz bottle beer ( flavor is different with each type of beer)  I like Rolling Rock, Millers or Heiniken

Mix together until blended well… turn mixture into a greased loaf pan

Melt ¼ cup butter and pour over batter in pan  -(can do as little as 2 TBSP but I prefer ¼ cup)

Bake at 350 degrees for 50 – 60 minutes depending on your oven.

Remove from pan and cool on a wire rack.

Beer Bread Variations

• For a “lighter” bread… mix and put in the pan and let it sit about 30 minutes or until it forms a crown before adding the butter – then add butter and bake

• Can divide this dough into 2 small loaf pans –adjust baking time

• Use 1/3 cup sugar instead of ¼ cup
• For a sweeter bread, substitute brown sugar for white sugar
• Add a handful of Mexican blend cheeses ( cheddar and jack) before adding the beer
• Can sprinkle garlic salt on top of the bread half-way through baking – after removing from the oven, brush top lightly with butter and sprinkle with garlic salt.

• Add ½ - 1 cup cup cheddar and ¼ cup chopped chilies
• Add ½ cup shredded cheese and ¼ cup sliced green olives
• If you are salt sensitive – use Unsalted butter on top of the bread mixture
• Use Brown Sugar instead of white and add ½ tsp Onion Powder and 1 tsp Italian seasoning
Add 1 cup finely shredded cheddar, 1 tsp. Italian Seasoning and 1/2 tsp garlic powder
