Bacon Breakfast Bake

 
 
 
- 8 slc French bread
- 2 c shredded cheddar cheese
- 8 or more slices bacon
- 4 green onions
- 2 tomatoes
- 6 eggs
- 1 Tbsp dijon mustard
- 1 Tbsp worcestershire sauce
- 1 c milk
1.   Preheat oven to 350.
2.   Cook bacon until crispy.
3.   Butter bread slices.
      Arrange buttered bread on work surface and top with bacon, 1/2 of the onion and
      1/2 of the cheddar cheese. Top with remaining bread slices.
4.   Cut sandwiches in half and arrange in casserole dish, top with sliced tomatoes.
5.   Whisk together eggs, mustard, milk and worcestershire sauce and pour over sandwiches. Refrigerate 6-24 hours.
6.   Sprinkle casserole with remaining cheese and green onions. Bake 50 minutes to 1 hour or until center is set. Remove from oven and let set 10 minutes. Cut into serving pieces and serve.

Sausage Pastry



1 can refrigerator crescent rolls
1 lb. hot sausage
8 ounces cream cheese
1/2 tsp dry mustard
1/4 tsp dill

Brown sausage and drain very well.  Mix with cream cheese, mustard, and dill.  Remove crescent rolls from can and place flat on a sheet of wax paper, use your fingers to connect the pieces so that you end up with a rectangle.  Spread sausage mixture on flattened crescent rolls.  Lift the end of the wax paper and roll up and off into a small pre-sprayed loaf pan.  Place in refrigerator overnight.  Remove and slice, place pieces in a pan, bake at 350 degrees for 20 minutes until golden brown.
These may be prepared in advance and frozen for use later.

Herlong Hash Brown Quiche


This recipe disproves the theory that "real men don't like quiche". In fact,
everyone loves the unusual blend of cream and crunch in the Hash Brown
Quiche. It's a perfect main dish at the breakfast table.


1-20 oz. package refrigerated or frozen shredded hash browns
1/3 cup melted butter
4 cups shredded mild cheddar cheese
6 cups milk
12 eggs
Cayenne pepper and garlic salt

Preheat oven to 425 degrees. Use 6 per "Texas-size" muffin pan; grease
well. Press hash browns into muffin cups to form crusts. Brush or drizzle
with melted butter. Bake 25 - 30 minutes. Reduce oven temperature to
350 degrees. Fill crust with cheese.

Whisk together milk, eggs, pepper and salt. Pour into muffin cups and
bake 30 - 40 minutes or until toothpick inserted into center comes out
clean. Makes 12 servings.

Allow to cool before removing from pan.

Ham 'n Cheese Pie



1 cup diced ham
1 cup cheddar cheese, shredded
1 cup milk
3 eggs
3/4 cup Bisquick mix
1/3 cup mayonnaise
1 tablespoon mustard

Preheat oven to 350 degrees. Coat a 9-inch pie pan with cooking spray. Place ham and cheese in pie pan; mix together. In blender or food processor, blend together eggs, milk, Bisquick and mustard for 1 minute. Pour over ham and cheese. Bake for 30 to 40 minutes, or until puffy and knife inserted in center comes out clean. Let stand for 5 minutes.

Green Eggs, No Ham



5 Eggs

1 Cup chopped frozen spinach, thawed

1 Teaspoon Grey Poupon mustard

1/4 Cup Milk
Salt & Pepper to taste
1/4 cup grated swiss cheese

Preheat oven to 375 degrees. Use nonstick spray on 8" casserole dish. 
Mix eggs with fork. Add all other ingredients except cheese. 
Pour into casserole dish, top with grated swiss cheese.
Cook for 30 minutes or until set. 
Serve with chopped tomatoes as garnish.

Grandma Ett's Chimney Hill Farm Quiche



1 Lb. Jimmy Dean spicy sausage
1 Dozen eggs

2 Cups grated cheese (cheddar and monterey jack)

Salt (to taste)

Pepper (to taste)

Garlic powder (to taste)

2 Packs Pillbury Crescent Rolls

2 Tbs. milk
 


Fry sausage. Crumble into small pieces. Drain and pat out all oil. Line bottom of 9x13 inch oblong pan with crescent rolls, pressing ends together to make a crust. Beat eggs with salt, pepper, and garlic powder. Mix in cheese and spread egg/cheese mixture over crust in pan. Top with crumbled sausage. Bake at 350 degrees in oven for 35-45 minutes. Top should be slightly golden and firm to touch.

Woodhaven Brunch Bake

        18 eggs
        3 T. water
        4 tablespoon unsalted butter, separated
        1 cup onions, chopped medium
        1 lb. pork sausage, rendered and drained
        1 lb. potatoes, shredded
        8 ounces sliced button mushrooms
        3 scallions, slice thin
        1 cup red bell pepper, chopped medium
        8 ounces shredded cheddar
        Salt and pepper to taste 

Preheat oven to 350 degrees.
Crack the eggs into a  large bowl, add the water and whisk until well combined.
In a medium skillet, melt 3 T. butter and cook the chopped onions, adding salt and pepper as needed.
Cook over medium heat for about 3-4 minutes and add the potatoes. Cook until they potatoes are beginning to brown 8-10 minutes, stirring occasionally.  With the remaining butter, sauté the mushrooms until they are caramelized, about 7-8 minutes.
Oil a large casserole dish. Add the scallions and the red pepper to the egg mixture and combine. Stir in the cheese and add some pepper.
In the prepared casserole dish, place the potato mixture in the bottom, followed by the sausage and pour the egg mixture over the top.
Baker for about 37-40 minutes or until the middle is firm. Broil the top for about 2-3 minutes to a golden brown.

Nana Mae's Hot Chicken Salad


Nana Mae was my grandmother.
This is her pantry - many wonderful things were assembled in there.
If I ever build a house, I'd love to recreate a pantry where all my "stuff" is readily available and the mess is out of site........with a sink, compactor and garbage disposal in it!



This is one of my favorite recipes from Nana Mae.... savory and delish. The mayo used in it "disappears" while baking so you can serve this to "Mayo Haters" - they'll never know... it will be our little secret!


1  1/2 cups diced cooked chicken
      (rotisserie chicken from grocery store if need be)

2 TBSP minced onion ( I use a medium onion, diced)

3/4 Cup Mayo (MUST be Hellmans Mayo)
Add enough to coat so it doesn't dry out, it "disappears" in the oven
(so you can feed this to mayo haters - they'll never know)

1/2 diced celery

1/2 tsp salt (omit to make this lower sodium)

1 TBSP lemon juice

2 or 3 hard boiled eggs, chopped

1/2 cup slivered almonds

1/2 c. crushed potato chips for topping
(I don't use the chips, I add more slivered almonds instead)

375 Degree Preheated Oven

Mix all ingredients gently, except chips.  Put into a 1 quart oven-proof dish . Sprinkle with crushed potato chips or more almonds.

Bake for 20 - 25 minutes until heated through.

Serves 4


NOTE - to scale this recipe for more people, just add more of everything and more mayo!  Easy Peasy!

Mulberry Garden casserole of Kentucky

also known as Kentucky Chicken and Wild Rice Casserole

To Prep: 15 minutes
To Bake: 25-30 minutes
Serves: 8


4 cups shredded cooked chicken
1 package (6 ounces) Uncle Ben’s Long Grain and Wild Rice Original Recipe
1 can (10.75 ounces) cream of celery soup (see Tips)
2⁄3 cup Miracle Whip salad dressing (see Tips)
1 can (8 ounces) sliced water chestnuts, drained
1 jar (2 ounces) sliced pimiento peppers, drained
1 package (9 ounces) frozen French-cut green beans, thawed and drained (see Tips)
11⁄2 cups low-sodium chicken broth (from one 14- to 14.5-ounce can) or water
2 tablespoons pre-grated Parmesan cheese
1. Preheat the oven to 400 °F.

2. Combine the chicken, rice with its seasonings, celery soup, salad dressing, water chestnuts, pimientos, green beans, and chicken broth in a large bowl. Transfer the mixture to a 13-by-9-inch (3-quart) glass or ceramic baking dish and top with the Parmesan cheese. Cover the baking dish with aluminum foil.

3. Bake the casserole until it is bubbling and the rice has cooked, 25 to 30 minutes. Let cool 5 minutes, then serve.

Tips: It is important for the flavor of the casserole not to substitute another type of soup for the cream of celery or mayonnaise for the sweeter Miracle Whip.
To quickly thaw the green beans, follow the microwave directions on the package, then drain them well. Or substitute a drained can of French-cut green beans for the frozen ones.

This casserole freezes well, either baked or unbaked, and it can be doubled or tripled for feeding a crowd. If you freeze it unbaked, don’t add the Parmesan cheese. Sprinkle it on before baking.

Breakfast and Brunch Bundles

This recipe originally appeared in The Best of Country Breakfast and Brunch (Reiman Publications, 2007), Maple Toast and Eggs.

Simple, yet sublimely ingenious and easily customized to suit your needs and preferences, serving breakfast or brunch has never been so cleverly bundled into one, tidy package.

Built in layers you create in a muffin tin, the end results are Breakfast & Brunch Bundles that can contain nearly any combination of flavors. From traditional bacon and eggs (as shown in these photos), you can step up your breakfast menu to include: ham and eggs, smoked salmon and eggs, sausage and eggs, You could even go veggie-style with: asparagus and eggs, red and green peppers and eggs (think Christmas Bundles), leeks and eggs, broccoli and eggs, or the tempting combination of spinach, garlic and eggs.

(Note - I also whisk up a few eggs with seasonings and pour over to make this a mini quiche since I don't like anything but hard cooked eggs)

Really want to dazzle your guests? Create Mini-Omelet Bundles using mushrooms,tomatoes and onions, or a combination of veggies and meat. Add your favorite shredded cheese, top with salsa, hot sauce or Hollandaise, and let the flavor explosion begin! The array of customizable Bundles you can create need only be limited by your imagination and tastes. Open up that fridge and see what’s on hand. Get creative. You don’t need a lot of ingredients, using last night’s leftovers will do!

Whatever ingredient mix you decide to include, be sure to allow 1 egg and 1 slice of bread per muffin cup, along with a dash of your favorite seasoning(s) and make sure you have some butter and corn syrup, maple syrup, molasses or sweet sorghum on hand. Within minutes you’ll be armed and ready to create delicious Breakfast or Brunch Bundles that will showcase your originality and preferences as a cook.

  1. Depending on how many Bundles you’ll be making, break out your standard-size 6 or 12 cup muffin tin(s). Coat each cup lightly with non-stick cooking spray.
  2. Choose the bread of your preference. This can be any sandwich bread you have on hand, or any artisan bread that calls your name. Like it sweet? Try cinnamon-raisin bread. Like it savory? Use 12 grain. Whatever bread you would use as toast, you can use here. Cut off the crusts, flatten each slice using the heel of your hand and lots of pressure, or roll each slice flat using a rolling pin. Allow 1 flattened, crustless slice of bread per muffin cup.
  3. Over low heat, begin melting butter and your binder of choice (i.e. corn syrup, maple syrup, molasses or sweet sorghum will do). Use 1/4 cup butter and 1/2 cup binder (syrup) per dozen eggs. Halve or double these measurements as needed (i.e. if only making 6 Bundles instead of 12, use 1/8 cup butter and 1/4 cup binder/syrup). Cook only until butter is melted; set aside.
  4. Next, decide on your filling. You won’t need much: 1 broken slice of bacon (what I used here) or sliced link of sausage will do. Perhaps a few, small chunks of ham, or slices of smoked salmon. The same goes for veggies as well—whatever base you decide to use (as this layer will go underneath the egg), just make sure it’s cooked thoroughly prior to building your Bundles. Note – If using a combination of meat, seafood, veggie, and/or cheese, a little dab will do. Resist the urge to use too much, or create too thick a layer. You must leave room for the egg to top each Bundle.
  5. To begin building the Bundles, brush 1 side only of each flattened piece of bread with the melted butter/binder (syrup) mixture. Press syrup side down into lightly greased muffin cups. Remember to allow 1 slice of bread per muffin cup/Bundle. If the bread overlaps itself inside the cups, that’s fine. If the bread tears, simply press it together and mend as you would a pastry dough.
  6. Next, divide your pre-cooked meat, seafood, and/or vegetables into a thin, even layer for each Bundle you are building. Be sure to leave plenty of room to top with an egg. This layer of meat and/or veggie doesn’t have to be solid, about a tablespoon (slightly more or less) per cup will do.
  7. Carefully break 1 egg into each cup and allow to spread naturally. Do not force the egg to spread or you’ll risk breaking the yolk.
  8. Lightly top each Bundle with your favorite seasoning(s), basic salt and pepper will do. Season according to range of ingredients used and/or end flavor desired.
  9. Cover loosely with aluminum foil, creating a tented effect to prevent the foil from touching the eggs.
  10. Bake at 400 degrees F for approximately 17-20 minutes, depending on the accuracy of your oven and desired degree of doneness. Baking for 17 minutes (or less) will yield a more soft-cooked egg, while cooking longer will yield hard-cooked egg results. Be sure to cook eggs completely (until yolk and white are firm) to avoid any potential for illness.
  11. Garnish if desired and serve immediately, allowing 2+ Bundles per guest.

Paula Deen Breakfast Hashbrown Casserole

* 3 tablespoons butter
* 1 small yellow onion, chopped
* 4 cups frozen shredded hash browns
* 1 pound bulk sausage, mild, hot or sage
* 2 1/4 cups whole milk
* 8 large eggs
* 1 teaspoon salt
* 1/4 teaspoon black pepper
* 1/4 teaspoon freshly grated nutmeg
* 2 tablespoons Dijon mustard
* 8 cups cubed French or Italian bread, crusts removed
* 2 cups (1/2 pound) grated Cheddar
* 2 cups (1/2 pound) freshly grated Parmesan

Directions

Preheat the oven to 350 degrees F.

Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray.

Melt the butter in a large frying pan. Add the onion and saute over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart. Saute until soft, about 5 minutes.

In a second frying pan, saute the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan.

In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard, briskly to blend.

To assemble, spread the onions and hash browns evenly at the bottom of the greased dish. Place the bread cubes evenly on top of hash browns. With a slotted spoon distribute sausage as the third layer. Pour the milk and egg mixture over these layers. Add Parmesan as the next layer, while then adding the Cheddar.

*Cook's Note: Save a few tablespoons of Cheddar for the last 10 minutes of baking, where you can add a fresh topping of melted Cheddar.

Bake the casserole, uncovered for 45 to 50 minutes, until puffed and golden brown.

Emeril's Texas Toast Breakfast Casserole

* 6 eggs
* 1 cup half and half
* 2 tablespoons green onions, chopped
* Salt and pepper
* Butter to grease pan
* 6 slices of Texas Toast (thick cut, crusty white bread)
* 1 pound spicy pork sausage, cooked and drained of fat
* 1 cup grated Cheddar cheese

In a small bowl, beat the eggs until they loosen up. Add the half and half, and green onions. Mix well, highly season with salt and pepper and set aside.

Butter a 12 by 10-inch baking pan. Line the pan with the bread, cutting and rearranging, if needed. Sprinkle the bread with the cooked sausage and cheese. Pour the egg mixture over the entire pan. Cover and refrigerate overnight.

Preheat oven to 350 degrees. Cook covered for 25 to 30 minutes or until the egg mixture is set.

Emeril's Savory Breakfast Casserole

* 2 tablespoons unsalted butter
* 1 1/4 cup finely chopped yellow onions
* 1/4 cup finely chopped red bell peppers
* 3/4 teaspoon salt
* 1/4 teaspoon freshly ground black pepper
* 2 teaspoons minced garlic
* 1 tablespoon minced fresh parsley leaves
* 6 ounces Canadian bacon or baked ham, trimmed and diced
* 2 links Emeril’s Kicked Up Smoked Sausage or 6 ounces hot
smoked sausage, chopped
* 8 large eggs
* 3 cups whole milk
* 1/2 cup heavy cream
* 1 1/4 teaspoons Emeril’s Original Essence or Creole Seasoning
* 8 cups (1-inch cubes) stale French or Italian bread, or rolls
* 8 ounces grated Gouda or Fontina cheese (about 2 cups)
* 1/2 cup fine dry bread crumbs
* 1/2 cup freshly grated Parmesan
* 2 tablespoons melted unsalted butter

Preheat the oven to 350 degree F. Lightly grease a 3-quart (9 by 13-inch) baking dish with 1 tablespoon of the butter and set aside.

In a medium skillet, melt 2 teaspoons of the butter over medium-high heat. Add the onions, green and red bell peppers, 1/4 teaspoon of the salt, and 1/8 teaspoon of the pepper and cook, stirring, until soft, 3 minutes. Add the garlic and cook, stirring, until fragrant, 30 seconds. Add the parsley, stir, and remove from the heat. Let cool.

In a medium skillet, melt the remaining 1 teaspoon butter over medium-high heat. Add the Canadian bacon and cook, stirring, for 3 minutes. Remove with a slotted spoon and drain on paper towels. Add the sausage to the skillet and cook, stirring, until lightly browned, 5 to 6 minutes. Drain on paper towels and let cool.

In a large bowl, beat the eggs. Add the milk, cream, 1 teaspoon of the Essence, remaining 1/2 teaspoon salt, and remaining 1/8 teaspoon pepper and whisk to combine. Add the bread cubes and let sit for 5 minutes. Add the cooked Canadian bacon and sausage, the onion mixture, and the Gouda cheese and stir to incorporate the ingredients. Pour into the prepared dish, cover with aluminum foil, and bake until almost completely set, 50 to 55 minutes.

(Alternatively, the bread pudding can be assembled up to this point, covered, and refrigerated 8 hours or overnight, and then baked. Let sit at room temperature while preheating the oven, before baking. )

In a small bowl, combine the bread crumbs, Parmesan, melted butter, and remaining 1/2 teaspoon Essence. Uncover the pudding and sprinkle the bread crumb mixture evenly over the top. Return to the oven, increase the heat to 375 degrees F and bake until the pudding is completely set in the center, puffed, and golden brown on top, about 20 minutes.

Let sit for 15 minutes before serving.

Beth's Breakfast Casserole

This one comes from my sister, Beth....

8 slices of bread, any kind
1# sausage cooked and drained
1 can cream of mushroom soup
1 dozen eggs
1 2/3 cups of milk
1 TB salt
2 cups grated sharp cheddar cheese
1 small can mushrooms

Dice bread and *pam* a 9x13 pan. and line with the bread.
Spread sausage over bread, then cheese.
Mix 1 cup milk and 1 dozen eggs.
Mix 2/3 cup of milk with soup. Mix eggs and soup mixtures together.
Pour oven rest evenly. Spread mushrooms on top.
Ref. overnight. Bake 350 45 mins or more.
