Soon-to-be-Famous Baked Beans

Soon-to-be-Famous Baked Beans

You’ll be famous when you make these delicious baked beans for your next cookout.
1/2 lb. ground beef
1/2 lb. bacon, diced
1 cup onion, chopped
2 Tbsp. molasses
2 tsp. vinegar
1/4 tsp. chili powder
1/2 cup ketchup
1 tsp. dry mustard
1 tsp. salt
2 (151/2 oz) cans Bush’s Pork and Beans
1 (15 1/2 oz.) can red kidney beans, rinsed and drained
1 (15 1/2 oz.) can butter beans, rinsed and drained
Brown the ground beef in a large skillet; drain fat and transfer beef to a Dutch oven or crock-pot. Fry bacon until crisp, reserving drippings. Drain bacon on paper towel and add to ground beef.
Saute onion in reserved bacon drippings until tender, about 5 minutes. Transfer onion to ground beef mixture. Stir in remaining ingredients. Bake, uncovered, in a 350-degree preheated oven for 40 minutes, or a crock-pot up to 3 hours. Serve hot.
Makes 12 servings

Isabel's Bootlegger Beans


Served at the Spring WOFAC meeting with rave reviews!  Delish!

Ingredients
3 strips of bacon, cut into small pieces
1 small onion, chopped
1 can pork & beans in tomato sauce
1 TBSP brown sugar
2 TBSP vinegar
2 TBSP ketchup

Directions 
Cut 3 strips of bacon into small pieces and fry them until about ½ done.
Add small chopped onion and cook until only slightly brown.  (Better to cut with grain from root to top)
After onions are slightly brown, pour off grease and add 1 can of pork & beans in tomato sauce,

Add 1 tablespoon of brown sugar, 2 table spoons of vinegar and 2 tablespoons ketchup and stir well.      Cover and let simmer for 30 minutes.

(Even better if baked for 2 hours in slow oven 280 degrees in a greased casserole dish).

You can use other types of beans for a different flavor. Mexican chili beans for one.
Also for a little tang add a little chili powder with ketchup

Steve's Bean Bake

Our tasters had no trouble seeing why these beans have earned Steve Boerrigter fame among his family and friends. His recipe was a favorite among the contributions we've received to the "What Can I Bring?" feature we introduced this year. It's a sure-fire crowd-pleaser.

Hands on time: 20 minutes  Total time: 1 hour and 10 minutes  Serves: 15

    1 (1-pound) tube regular or spicy Jimmy Dean Sausage 4 (15- to 16-ounce) cans different types of beans (dark red kidney, black beans, navy beans, pinto beans, etc.) 1 (31-ounce) can pork and beans 1/2 cup brown sugar 1/2 cup barbecue sauce 1/2 cup ketchup 1/2 large onion, chopped 1 (10-ounce) can regular or spicy Ro-tel chopped tomatoes, drained 1 teaspoon liquid smoke 1 teaspoon mustard 1/2 teaspoon salt 1/2 teaspoon coarsely ground pepper 6 to 8 strips bacon

Preheat oven to 350 degrees. In large skillet, brown sausage, breaking up into pieces as it cooks. When cooked through, remove from skillet; drain fat. In very large bowl, mix sausage with beans, pork and beans, brown sugar, barbecue sauce, ketchup, onion, tomatoes, liquid smoke, mustard, salt and pepper. Transfer mixture to a 13-by-9-inch baking pan. Place bacon on top and bake for 1 hour. If necessary, run under broiler to make bacon crisp before serving.

Per serving: 343 calories (percent of calories from fat, 39), 14 grams protein, 39 grams carbohydrates, 9 grams fiber, 15 grams fat, 27 milligrams cholesterol, 1,231 milligrams sodium.

Tailgating Baked Beans

1 28 oz can of Bush's Original Baked Beans (These are not as sweet as other brands)
1 large green bell pepper - chopped
1 large white onion (Vidalia or Texas Sweet) - chopped
1/2 cup catsup
2 teaspoons - brown sugar
2 Tablespoons - Ms. Butterworth's Syrup
1 to 1 1/2 Tablespoons - Lea and Perrins Worcestershire sauce
1 teaspoon - Dried mustard or 3 to 4 tablespoons of prepared mustard
Several shakes of Ms. G's Cajun Shaker seasoning (other or your own seasoning may be substituted)
About 8 slices bacon - cut in inch pieces

Combine all ingredients together, except the bacon, and mix well. Pour in a 3 quart rectangular Pyrex baking dish. Arrange the bacon squares on top. Bake with lid on at 325 degrees for an hour to an hour and a half. Take lid off, put on broil and slightly brown the bacon. Don't over cook or dry out. It will be very moist to runny when ready.
