Mrs Clear's Cheesy Potato Soup

6 cups diced potatoes
2 large onions, diced
1 cup celery – diced
1 cup carrots – shredded
1 TBSP salt
7 1/2 cups water

Boil this until the potatoes are almost tender.

Mix together –
1/2# melted butter
3/4 cup flour
1/2 tsp pepper

Add this to the above mixture and cook until thickened.

After soup has thickened, add 1 Qt. milk and 1 # Velvetta cheese

Cook until thickened stirring constantly.
