Texas Chainsaw Barbecue Sauce


Texas Chainsaw Barbecue Sauce
For all of our Texas friends, here’s a tangy, vinegar based sauce with big flavor. It’s unlike the sweeter tomato based Kansas City sauce and is perfect for your wonderful briskets, beef ribs and chicken.
2 tablespoons butter
1 medium onion, finely chopped
2 garlic, minced
½ cup orange juice
1 cup cider vinegar
2 tablespoons fresh lemon juice
2 slices lemon
1 cup real maple syrup
¼ cup Worcestershire sauce
2 cups ketchup
¼ cup molasses
¼ cup brown sugar
2 tablespoons dry mustard
1 teaspoon salt
½ teaspoon red pepper flakes
½ teaspoon ground cumin
½ teaspoon paprika
Directions
In a large saucepan over medium heat, melt butter. Add the onion and garlic; cook and stir until tender, about five minutes.
Stir in the orange juice, cider vinegar, lemon juice, lemon slices, maple syrup, Worcestershire sauce, ketchup, molasses, and brown sugar. Season with dry mustard, salt, red pepper flakes, cumin and paprika.
Simmer  over low heat for 45 minutes to one hour. Remove lemon slices before using.
Baste on meat during cooking or use as condiment at table.
