Babyback Ribs with Sauerkraut

From the Porkopolis Restaurant

2 racks babyback ribs
3 cups sauerkraut
2 slices cooked bacon, chopped
2 cans baby potatoes, drained
salt and pepper to taste

Pan-boil ribs for 4 hours over medium low heat (bring to a boil, then simmer).

In a medium saucepan combine kraut,baby potatoes, bacon, salt and pepper.  Plate ribs and smother with kraut mixture.
