Pesto Potato Salad

This recipe is part of Linda Larsen's More Summer Salads article.

This salad comes from the same contest! It won the grand prize for the fabulous flavors and textures. I had my way with it and my version appears here.

1/2 cup mayonnaise
1/2 cup plain yogurt
1/4 cup low fat mayonnaise
1/4 cup milk
1/4 cup freshly grated Parmesan
1/4 cup prepared pesto

Combine well and set aside.

3 pounds red potatoes, boiled, peeled and cubed
1/2 cup sliced green onions
1 chopped celery or zucchini
2 cups Havarti or Muenster cheese, cubed

Combine potatoes, green onions, veggies and cheese. Stir in dressing and chill well.

Serves 8
