I am usually the one in the family who brings the salad to the family carry-ins. This is one of their favorites......mine too.
1 or 2 heads of Napa lettuce
5 or 6 green onions
Chop and place in large bowl
In a saucepan :
melt butter & toast until ingredients are light brown:
1 stick butter
2 tsp. sesame seeds
2 packages Ramen noodles;
crush in package (do not use seasoning)
1 small package slices almonds
Toss with the above mixture with chopped lettuce and onions that you set aside.
Dressing:
1 cup Vegetable oil
1 cup sugar
1/2 cup rice vinegar
4 tsp. soy sauce
Mix in a shaker container. Shake well and pour over salad above right before serving. What seems like a lot will shrink down considerably.
For 6 people or less I only use one head of napa cabbage. This salad does not keep well so plan to eat it all.
Note: I've doubled the original recipe for the dressing.....because I think it needs to coat the leaves of cabbage, not just hit or miss.
I often add chicken or chopped up grilled steak to this for a complete meal and serve it along with crusty bread.
Enjoy!
