Shaggy Man's Split Pea Soup

* 1/2 stick butter
* 1/2 pound thick slab bacon, chopped
* 1 large onion, diced
* 2 stalks celery stalk with leave, diced
* 2 carrots, shredded
* 1 pound ground pork sausage
* 1 pound dried split peas, soaked overnight in cold water
* 2 to 3 quarts chicken stock
* House Seasoning, recipe follows
* Salt and pepper

Melt butter in Dutch oven. Add bacon and saute until tender. Add onions, celery, carrots and pork sausage. Combine together and start with 2 quarts of chicken stock. Add more later if necessary. Add salt, pepper and house seasoning. Add peas and cook on low temperature simmering for about 2 hours.


House Seasoning:

* 1 cup salt
* 1/4 cup black pepper
* 1/4 cup garlic powder
* 1/4 cup onion powder

Mix ingredients together and store in an airtight container for up to 6 months.

Parker's Split Pea Soup from Ina

Serves: 5 to 6 servings

1 cup chopped yellow onions
2 cloves garlic, minced
1/8 cup good olive oil
1/2 teaspoon dried oregano
1-1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 cups medium-diced carrots (3 to 4 carrots)(can use grated carrots)
1 cup medium-diced red boiling potatoes, unpeeled (3 small)
1 pound dried split green peas
8 cups chicken stock or water (or half and half)

If desired, throw in a ham bone or leftover ham cubes.

In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper. Serve hot.

Crockpot Split Pea Soup Recipe

4 Servings
Ready in: > 5 hrs

* 1 pound green split peas
* 8 cups reduced-sodium chicken broth
* 1 smoked ham bone or ham hock
* 1 1/2 cup carrot, chopped
* 1 cup Spanish onions, finely chopped
* 1 cup celery, chopped
* 2 cloves garlic, minced
* 2 bay leaves
* Salt and freshly ground black pepper

Combine all ingredients in a slow cooker. Cover and cook on low for 6 to 8 hours or on high for 4 to 5 hours, until peas are tender. Remove bay leaves and ham bone and season with salt and black pepper before serving.

Gramp's Split Pea Soup

This is my dad's split pea soup recipe, it is wonderful... great comfort food.

1 # ( about 2.5 cups) split peas
3 Qts water
1 3/4 – 2# smoked ham hocks or a large ham bone
1 large onion, minced
1 cup diced carrots
1 cup diced celery
1 bay leaf
1 TBSP lemon juice
2 tsp salt
1/8 tsp. pepper

Rinse and sort peas.
In a large soup kettle, combine peas, water, and bone –Simmer covered 2 – 2.5 hours.
Add remaining ingredients, simmer covered 45 minutes. Remove bone from soup, cut meat from bone; dice and add to soup.

For a thicker soup – simmer UNCOVERED 20 – 30 minutes longer.

Season to taste.

Serves 10 -12
