Granny Jordan's Front Porch Fruit Salads

Line a muffin tin with paper cups and fill each cup with salad mixture.
Freeze several hours, or until firm.
Pop out of the muffin tin, but leave in the papers, and place salads in gallon zipper seal bags and return to the freezer.
Serve frozen.
Makes about three dozen salads.

Granny Jordan’s Front Porch Fruit Salads

  • 1 -12 ounce can frozen orange juice concentrate, with pulp
  • 24 ounces frozen sweetened, sliced strawberries
  • 15 ounce can apricots, diced (can use peaches)
  • 3 ripe bananas
  • 20 ounce can crushed pineapple
  • 16 ounces Greek Yogurt (can use plain, substitute whipped topping, or leave out entirely)
  • 1/2 Cup sugar
  • Muffin papers
Drain juice from both cans of fruit into a measuring cup. Using a knife, carefully dice apricots while still in the can. Place reserved fruit juices and sugar in sauce pot and cook, stirring constantly, over medium heat until sugar is dissolved. Remove from heat and set aside.
In large bowl place peeled bananas and mash well with long tined fork. Add in chopped apricots, pineapple, strawberries (juice and all), orange juice concentrate, and yogurt. Stir well. Pour in cooled juice mixture. Stir until well combined.
Line a muffin tin with paper cups and fill each cup with salad mixture. Freeze several hours, or until firm.

Refreshing Grape Salad

Serves 10 – 12

2 pounds red seedless grapes
2 pounds green seedless grapes
8 ounces cream cheese
8 ounces sour cream
½ cup sugar

Clean, rinse and pat dry the grapes and place in a large bowl

Mix together in another bowl the cream cheese, sour cream and sugar
Stir the mixture into the grapes
Pour into a 9 X 12 inch glass dish

Ingredients For Topping
¾ cup brown sugar
1 cup chopped pecans

In another bowl, mix the brown sugar and chopped pecans together
Sprinkle the topping over the grape mixture and pat lightly (do not mix into the salad)

Mom's Fruit Salad

It would not be Thanksgiving or Christmas without this salad... everyone loves it.


2 cans pineapple tidbits or chunks in heavy syrup (drained very well, even overnight) If using chunks cut them again.
2-3 three apples peeled or not
lots of green & red grapes cut in half seeded - put on paper towels to absorb moisure
6 bananas or more
1 jar of maraschino cherries - Cut in half and place cut side down on paper towel to drain excess moisture
a bag of miniature marshmallows
2 pints heavy whipping cream

Whip the cream till quite stiff (don’t over whip or you’ll have butter)
Sweeten with 2-3 TB sugar
Add 1/2 tsp cream of tarter at the same time.

Mix all together. You can add other fruits if you like.
