    Barbecued Chicken Pizzas Recipe

    • 2 boneless skinless chicken breast halves (6 ounces each)
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    • 1 cup barbecue sauce, divided
    • 1 tube (13.8 ounces) refrigerated pizza crust
    • 2 teaspoons olive oil
    • 1 medium red onion, thinly sliced
    • 2 cups (8 ounces) shredded Gouda cheese
    • 1/4 cup minced fresh cilantro

    Directions

    • Sprinkle chicken with salt and pepper. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a meat thermometer reads 170°, basting frequently with 1/2 cup barbecue sauce. Set aside and keep warm.
    • Divide dough in half. On a lightly floured surface, roll each portion into a 12-in. x 10-in. rectangle. Lightly brush both sides of dough with oil; place on grill. Cover and grill over medium heat for 1-2 minutes or until the bottom is lightly browned.
    • Remove from grill. Cut the chicken into 1/2-in. cubes. Spread the grilled side of each pizza with 1/4 cup barbecue sauce; layer with chicken, onion, cheese and cilantro. Return to grill. Cover and cook each pizza for 4-5 minutes or until the bottom is lightly browned and cheese is melted. Yield: 2 pizzas (4 pieces each).

    Pepperoni Spinach Quiche

    1 tube (8 ounces) refrigerated crescent rolls
    1 large sweet red pepper, chopped
    1 tablespoon olive oil
    1 garlic clove, minced
    5 eggs, lightly beaten
    1/2 cup shredded part-skim mozzarella cheese
    1/2 cup frozen chopped spinach, thawed and squeezed dry
    1/4 cup sliced pepperoni, cut into strips
    1/4 cup half-and-half cream
    2 tablespoons grated Parmesan cheese
    1 tablespoon minced fresh parsley
    1 tablespoon minced fresh basil or 1 teaspoon dried basil
    Dash pepper
    Directions
    Separate crescent dough into eight triangles; place in an ungreased 9-in. fluted tart pan with removable bottom with points toward the center. Press onto the bottom and up the sides to form a crust; seal seams. Set aside.
    In a small skillet, saute red pepper in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat. In another small bowl, combine the remaining ingredients; stir in red pepper mixture. Pour into crust.
    Bake at 375° for 25-30 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting. Yield: 8 servings.

    Zucchini Quiche Recipe


    Zucchini Quiche Recipe

    6-8 Servings
    Prep: 20 min. Bake: 55 min.

    1 unbaked pie pastry (9 inches)
    1 pound zucchini, thinly sliced
    2 tablespoons butter
    1-1/2 cups (6 ounces) shredded mozzarella cheese
    1 cup ricotta cheese
    1/2 cup half-and-half cream
    3 eggs, lightly beaten
    3/4 teaspoon salt
    1/2 teaspoon dried oregano
    1/2 teaspoon dried basil
    1/4 teaspoon garlic powder
    Dash pepper
    Paprika

    Prick bottom of pastry with a fork. Bake at 425° for 7 minutes. Reduce heat to 350°.
    In a small skillet, saute zucchini in butter until tender; drain. Place half the zucchini in the crust. Sprinkle with mozzarella cheese.
    In a bowl, combine ricotta cheese, cream, eggs, salt, oregano, basil, garlic powder and pepper. Pour into crust. Arrange remaining zucchini slices over top. Sprinkle with paprika. Bake for 45 minutes or until a knife inserted in the center comes out clean. Yield: 6-8 servings.

    BEST DEVILED EGGS

    12 hard-cooked eggs
    1/2 cup mayonnaise
    1 teaspoon dried parsley flakes
    1/2 teaspoon minced chives
    1/2 teaspoon ground mustard
    1/2 teaspoon dill weed
    1/4 teaspoon salts
    1/4 teaspoon paprika
    1/8 teaspoon pepper
    1/8 teaspoon garlic powder
    2 tablespoons milk
    Fresh parsley
    Additional paprika
    Directions
    • Slice eggs in half lengthwise; remove yolks and set whites aside.
    • In a small bowl, mash yolks. Add the next 10 ingredients; mix well.
    • Evenly fill the whites. Garnish with parsley and paprika. 
    • Yield: 2 dozen.

    A tip I read recently - put your yokes in a zip-lock bag and then add all your ingredients. Cut a hole in one corner of the bag and squeeze the filling into the eggs - much less mess.
    Definitely make ahead and put in paper towel lined tupperware container. Loved them!
