Isabel's Bootlegger Beans


Served at the Spring WOFAC meeting with rave reviews!  Delish!

Ingredients
3 strips of bacon, cut into small pieces
1 small onion, chopped
1 can pork & beans in tomato sauce
1 TBSP brown sugar
2 TBSP vinegar
2 TBSP ketchup

Directions 
Cut 3 strips of bacon into small pieces and fry them until about ½ done.
Add small chopped onion and cook until only slightly brown.  (Better to cut with grain from root to top)
After onions are slightly brown, pour off grease and add 1 can of pork & beans in tomato sauce,

Add 1 tablespoon of brown sugar, 2 table spoons of vinegar and 2 tablespoons ketchup and stir well.      Cover and let simmer for 30 minutes.

(Even better if baked for 2 hours in slow oven 280 degrees in a greased casserole dish).

You can use other types of beans for a different flavor. Mexican chili beans for one.
Also for a little tang add a little chili powder with ketchup
