This recipe came from my O.R. days........one of our surgeons used to make it and bring it to our carry-in dinners.
1 3 oz package INSTANT Pistachio pudding mix
1 large can crushed pineapple, undrained
1 large container of Cool Whip, ready to use
Mix together and then fold in cool whip.
Serve in sherbet or parfait dishes.
