This is one of my favorite meals. Although it is filling, think about saving it for a night when you’re not craving meat. You can buy two pounds of on-the-vine tomatoes (probably more than you’ll need) for $2.99, and a large loaf of crusty French bread for $3.99. You can use the leftover garlic that you bought for the rice and beans recipe, and the leftover basil you used for the pasta recipe.
The recipe: (10–15 minutes)
Preheat oven to 350° F. Slice French bread into
medium-thick pieces, and place in oven. Cook until slightly browned.
Combine tomatoes, olive oil, garlic, basil, salt, and pepper in a bowl.
When the French bread is ready, spoon the tomato mixture on top of the
bread and enjoy. It’s very good, and if you’re like me, you might want
to go heavy on the garlic.
