I have never tried this recipe, it was given to me by a former co-worker
13 oz can chicken broth
1 medium onion, diced
5 medium potatoes, peeled and sliced very thin ( 5 cups)
6 slices of bacon
3 TBSP flour
1 cup very sharp shredded cheddar cheese
1 cup Velvetta cheese
In a medium saucepan over medium heat, bring broth to a boil. Add potatoes and onions, cover and simmer for 5 minutes.
Drain - saving the 1 1/2 cups broth.
In skillet over medium high heat, cook bacon until crisp. Remove pan from heat, crumble bacon. Pour off all but 3 TBS of bacon fat. Blend flour with the drippings.
Gradually add chicken broth.
Cook over medium heat stirring constantly, until thickened.
Stir in cheese until melted.
In a greased 2 qt baking dish, Layer 1/3 of the pototoe onion mix, then sauce and bacon and repeat layers twice.
Bake at 400 for 35 minutes or until done.
