Old-fashioned taste and recipe
1/2 cup diced or sliced carrots
1/4 cut diced celery
1/2 cup chopped onion
1 tsp butter
6 cups chicken broth
1 1/2 cups diced cooked chicken
1 tsp salt
1/2 tsp dried marjoram
1/2 tsp dried thyme
1/2 tsp pepper
1 1/4 cups uncooked medium egg noodles
1 TBSP fresh parsley, minced
In a large saucepan, saute the carrot, celery, onion in butter for 10 minutes or until tender. Stir in the broth, chicken and seasonings. bring to a boil. Reduce heat. Add noodles, cook for 10 minutes or until noodles are tender. Sprinkle with parsley and serve.

Focaccia Turkey Sandwich
1 loaf of Focaccia bread
1/2 cup spinach dip or chive and onion cream cheese spread
2 TBSP Dijon mustard
8 oz thinly sliced deli smoked turkey
4 oz slices Swiss Cheese
1 medium tomato, thinkly sliced
Cut bread in half horizontally, spread with spinach dip or chive cream cheese spread on each half. Spread with mustard - layer the turkey, cheese and tomato on bottom half. Replace top half and cut into wedges. Serve
10 - 12 servings

Creamy Peppercorn Dressing
1/4 cup mayo
1/4 cup sour cream
2 TBSP milk
2 tsp cider vinegar
1 tsp coarse black ground pepper
1/4 tsp garlic powder
1/4 tsp onion salt
In a medium bowl, combine all ingredients until well blended. Cover and refrigerate until serving. Stir before serving.
Yield 1/2 cup
Makes a great wedge salad
Serve over a wedge of iceberg lettuce. Sprinkle with crumbled cooked bacon
and thinkly sliced red onion. Add dried cranberries if desired.

1/2 spiral sliced fully cooked bone-in ham ( 8 - 10 pounds)
2/3 cup maraschino cherries
1 1/2 cups packed brown sugar
1/2 tsp. seasoned salt ( recipe calls for it, I skip it)
Drain pineapple, reserving juice. Place ham on a rack in a shallow roasting pan.
Secure pineapple and cherries to ham with toothpicks.
Combine brown sugar and seasoned salt and rub over ham.
Gently pour pineapple juice over ham.
Bake at 325 for 1 1/2 to 2 hours or until a meat thermometer reads 140 degrees and ham is heated through. Baste frequently with brown sugar mixture

Jan's Crustless Bacon, Onion, Broccoli Quiche
10" deep pie pan
Preheat oven to 350 degrees (325 if using a glass pie plate)
Grease pie plate with olive oil, set aside
Fry 8 -10 slices of bacon until crisp - crumble when cool, set aside
I medium onion, sliced thin
Chunk of broccoli, raw... dice
1 cup colby jack cheese
6 eggs ( add 2 more yolks if using reg milk)
1 cup heavy whipping cream ( Can use reg milk)
If you use 2% milk, add a TBSP butter
Salt and Pepper to taste
Fry bacon, drain on paper towels, set aside
While bacon is frying, slice onion in rings and separate.
Once bacon is done, drain most of the grease.... just save a little to fry onion rings in .. don't need much. When onion is limp, remove from pan.
Chop broccoli - you don't need a lot or it will overpower the flavor

Jan's Black Bean Corn Salsa
YUMMO!
I double this if taking it to a carry in or family gathering
1/3 cup fresh lime juice (about 3 limes)
1/4 cup Extra Virgin Olive Oil
1 very large clove garlic minced
1 tsp salt
1/8 tsp cayenne pepper ( I add a little more depending on guests)
2 cans black beans rinsed (15 oz) AND drained
1.5 cups frozen corn kernels ( if doubling, I add the entire bag)
1 avocado = peeled,pitted and diced
2 large tomatoes diced -
1 sweet red pepper, chopped
6 green onions thinly sliced...green tops too
1 medium cucumber, peeled, seeded and chopped

1/4 cup fresh cilantro chopped (optional)
Combine dressing - lime juice, olive oil, garlic, salt, cayenne pepper in a small jar,cover with lid and shake until well mixed.
In a salad bowl, combine the beans, corn, avocado, red pepper, tomatoes, onions, cucumber, and if you are using it, cilantro. Stir together. Shake dressing and pour over the salad, stir to coat.
Serve as a side dish or better yet.. with the nacho chips or "big dippers"
