Whiskey Slush

For a Crowd                                                  

1 can (12 oz) frozen O.J.
1 can (12 oz) frozen lemonade
1.5 cup sugar
5 cup water
3 cups whiskey
7 Up

Mix all ingredients  EXCEPT 7-UP
FREEZE

To make 1 drink -

Put  2 - 3 TBSP of mix in a highball glass with an ice cube and fill glass with  7 Up, Mix well.

Add a maraschino cherry for color

North Dakota Sunflower Pie (Midwest Living)

This sunflower pie, from a North Dakota restaurant, has the texture of pecan pie. It's rich and sweet, with a sunflower crunch.

  • beaten eggs
  • 1/2 cup packed brown sugar
  • 1/2 cup light corn syrup
  • 1/2 cup dark corn syrup
  • 1/4 cup sugar
  • tablespoons sunflower margarine, melted
  • teaspoon vanilla
  • 1/4 teaspoon salt
  • cup roasted, salted sunflower kernels
  • unbaked 9-inch pie shell

directions

  1. In a large bowl, beat together eggs, brown sugar, corn syrups, sugar, margarine, vanilla, and salt.
  2. Spread sunflower kernels evenly in the bottom of the unbaked pie shell. Pour in the sugar mixture.
  3. Bake in a 350 degree F oven for 50 to 60 minutes or until center is almost set (it will jiggle slightly). Cool on a wire rack. Makes 8 servings.

Millionaire's Pie

This pie might be the ultimate comfort food: a gooey chocolate-pecan filling nestled in a flaky piecrust.

  • Pastry for Single-Crust Pie 
  • eggs
  • cup light-colored corn syrup
  • 1/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 1/3 cup butter or margarine, melted
  • teaspoon vanilla
  • 1/4 teaspoon salt
  • - ounce package semisweet chocolate pieces (1 cup)
  • cup flaked coconut
  • cup walnut or pecan pieces
  • Whipped cream (optional)
  • Toasted flaked coconut (optional)

directions

  1. Prepare Pastry for Single-Crust Pie. To transfer pastry, wrap it around the rolling pin. Unroll pastry into a 9-inch pie plate. Ease pastry into pie plate without stretching. Trim pastry to 1/2 inch beyond edge of pie plate. Fold under extra pastry. Crimp edge. (Do not prick.) Set aside.
  2. For filling: In a medium bowl, combine eggs, corn syrup, granulated sugar, brown sugar, butter, vanilla, and salt.
  3. In pastry shell, layer semisweet chocolate pieces, 1 cup coconut and walnut pieces. Pour egg mixture over all, spreading evenly. To prevent overbrowning, cover edge of pastry shell with foil.
  4. Bake in a 350 degree F oven for 30 minutes. Remove foil; bake for 20 to 25 minutes more or until set. Cool completely on a wire rack. Cover and store in refrigerator within 2 hours. If you like, serve with whipped cream and sprinkle with toasted coconut. Makes 8 to 10 servings.

Pastry for Single-Crust Pie

ingredients

  • 1 1/4 cups all-purpose flour  
  • 1/4 teaspoon salt
  • 1/3 cup shortening
  • 4 - 5 tablespoons cold water

directions

  1. In a bowl stir together flour and salt. Using a pastry blender, cut in shortening until pieces are pea-size. Sprinkle 1 tablespoon of water at a time over the flour mixture, tossing with a fork until all of the dough is moistened. Form dough into a ball.

Sweet and Sour Cabbage Wedges

Total time: 25 minutes
2 tablespoons olive oil
1/2 head green cabbage, quartered through the core
1/2 cup cider vinegar
2 tablespoons sugar
course salt and ground pepper
In a large skillet, heat oil over medium.  Add cabbage, and cook until golden brown, 2 to 4 minutes per side. 
Add vinegar, sugar and 1 1/2 cups water; bring liquid to a simmer.  Cook, turning once, until cabbage is tender (test by poking it with a knife) and liquid is syrupy, 12 to 15 minutes.
Season with salt and pepper

Ozark Berry Cobbler

Ozark cooks fill this cobbler with any kind of fruit they have on hand. This version sandwiches juicy berries between the streusel top and pastry.

  • cups all-purpose flour                         
  • 1/2 teaspoon salt
  • 2/3 cup butter
  • 6 -7 tablespoons cold water
  • cup granulated sugar
  • 1/4 cup quick-cooking tapioca
  • tablespoons all-purpose flour
  • cups fresh or frozen blackberries
  • cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 cup butter
  • Whipped cream (optional)
  • blackberries (optional)
  • Fresh mint sprigs (optional)

directions

  1. For pastry, stir together the 2 cups flour and the salt. Using a pastry blender, cut in the 2/3 cup butter until pieces are pea size. Sprinkle 1 tablespoon of the water over part of mixture; gently toss with a fork and push to side of bowl. Repeat until all is moistened.
  2. Divide dough into 6 portions. Form each portion into a ball. On a lightly floured surface, use your hands to slightly flatten dough. Roll each portion of dough to an 8-inch circle.
  3. Transfer pastry to six 10-ounce custard cups or oven-safe bowls or 6 individual pie pans. Ease pastry into baking containers, being careful not to stretch pastry. Trim the pastry to 1/2 inch beyond the edge. Fold under extra pastry. Crimp the edge as you like. Place baking containers on a baking sheet.
  4. For filling, in a large bowl, stir together granulated sugar, tapioca, and the 3 tablespoons flour. Add the 6 cups blackberries. Let mixture stand 15 to 30 minutes or until berries are partially thawed, but still icy. Transfer berry mixture to the pastry-lined baking containers.
  5. For topping, in a medium bowl, combine the 1 cup flour, the brown sugar, and cinnamon. Using a pastry blender, cut in the 1/2 cup butter until crumbly. Sprinkle over filling. Bake in a 375 degree F oven about 35 minutes or until pastry is golden. Cool slightly on a wire rack. Serve warm. Dollop with whipped cream and garnish each with a berry and mint, if you like. Makes 6 servings.
